Produced during a banner year in the vineyard, BHFV’s Merlot was gently crushed and fermented for 10-14 days to a maximum temperature of 88 degrees. It was then aged in handcrafted, small French oak barrels (barriques), 20% new, for up to 18 months. There it was closely scrutinized and racked quarterly to remove unwanted sediment and to assure its high quality. BHFV’s signature Merlot exhibits aromas and flavors of black cherry, blackberry and plum, underscored with slight accents of smoke and vanilla from the oak. The palate is rich and structured with sufficient but mild tannins and a long, lingering finish. It has bottle-aged gracefully and will continue as such for countless years.

Red Velvet 2016
Red Velvet is the name we give to this premium, seductively smooth wine produced from BHFV’s very best vintage to date. This sensuous blend of select Estate Merlot, Cabernet Franc and Cabernet Sauvignon grapes, in just the right balance, tantalizes the senses with dark fruits, coffee, and peppery nuances. The extensive aging in French oak barrels and then in bottles has produced a bold wine with a firm grip and character. Serving suggestions: It is superb with steaks and roasts while a great match for brie, cheddar cheese and chocolate. Best when served at 63 °F.

Cabernet Sauvignon 2017
Made from carefully selected fruit from the northernmost section of BHFV’s vineyard, the grapes are vine-ripened to the utmost and gently crushed and placed into stainless steel tanks during fermentation. After 10-14 days, the resulting wine is separated from its skins and the first free run is placed into small oak barriques, of which 20% are new American oak barrels. After 14-18 months of oak aging under careful supervision, with quarterly racking to assure quality, the wine is bottled. BHFV’s Cabernet Sauvignon’s richness is first noticeable in its deep red color. It offers up similar richness to the taste with its dark fruit aromas and flavors of black cherry and black currant with dark chocolate. Accents of coffee and smoke can be attributed to the oak influence. The tannins are subtle and firm, giving this wine great structure and superb aging potential.
Cabernet Franc 2014
BHFV’s Cabernet Franc was picked at optimal ripeness and then gently crushed, retaining 20% whole berries during its fermentation for 10-14 days. During post fermentation, the free run is drained off into oak barriques for up to 14 months and is closely checked and racked on a quarterly basis. BHFV’s Cabernet Franc is softer and fruitier than the Cabernet Sauvignon and its earthier character consists of tastes and aromas of cherry, blackberry and vanilla with an herbal, white pepper and bramble fruit aroma. The tannins are soft and gentle, and the finish is smooth with a rounded palate.
