Merlot Gently crushed and fermented for 10-14 days to a maximum temperature of 88 degrees. The free run portion is drained off, separated from its skins and aged in hand-crafted, small French oak barriques (oak barrels), 20% new, for up to 18months. There it is closely scrutinized and racked quarterly to remove unwanted sediment and to assure its high quality. BHFV's signature Merlot exhibits aromas and flavors of black cherry, blackberry and plum, underscored with slight accents of smoke and vanilla from the oak. The palate is rich and structured with sufficient but mild tannins and a long lingering finish.While exquisite and ready to drink now, it will age gracefully over the next 3-7 years.
Serving suggestions: pairs well with nearly all starters – seafood, pasta and chicken – as well as red meat dishes such as roasts or steaks. Best served at approximately 64° F.
Made from carefully selected fruit from the northernmost section of our vineyard. The grapes are vine-ripened to the utmost and then gently crushed and placed into stainless steel tanks during fermentation. After 10-14 days, the resulting wine is separated from its skins and the first free run is placed into small oak barriques of which 20% are new American barrels. After 14- 18months of oak aging under careful supervision, with quarterly racking to assure quality, the wine is bottled. BHFV Cabernet Sauvignon's richness is first noticeable in its deep red color. It offers up similar richness to the taste with its dark fruit aromas and flavors of black cherry and black currant with dark chocolate. Accents of coffee and smoke can be attributed to the oak influence. The tannins are subtle and firm, giving this wine great structure and superb aging potential.
Serving suggestions: ideal with beef, lamb and goose, especially when cooked with herbs. It is superb with steaks and roasts while a great match for brie, cheddar cheese and chocolate. Best when served at 63° F.
Picked at optimal ripeness and then gently crushed, retaining 20% whole berries during its fermentation for 10-14 days. During post fermentation, the free run is drained off into oak barriques for up to 14months and is closely checked and racked on a quarterly basis. Our Cabernet Franc is softer and fruitier than our Cabernet Sauvignon and its earthier character consists of tastes and aromas of cherry, blackberry and vanilla with an herbal, white pepper and bramble fruit aroma. The tannins are soft and gentle, and the finish is smooth with a rounded palate.
Serving suggestions: a wonderful partner to herbed poultry, roasted or grilled, small game and fowl and red sauce pasta dishes.Best when served at approximately 63° F.
An extraordinary and refreshing wine which is produced from BHFV's Cabernet Sauvignon grapes. After crushing, the juice is left in contact with the skins overnight to develop its beautiful color. It is then aged and carefully processed in stainless steel just like our white wines. BHFV's limited production Rose, produced in an off-dry style, has bright strawberry, raspberry, rhubarb-vanilla aromas and flavors.
Serving suggestions: a choice wine to serve with most any meal and it is especially delicious with any cheese and/or fruit or on its own as an aperitif. Serve chilled at approximately 47° F.
Red Table Wine
A blend of 70% Cabernet Franc, 25% Merlot and 5% Cabernet Sauvignon. Fourteen months of aging in older oak barrels and a precise racking schedule help produce this wine in an easy-drinking, everyday style. Bright cherry fruit aromas and flavors abound in this soft red wine.
Serving suggestions: a nice match for pizza and burgers as well as slightly chilled for the summertime barbecue with your favorite grilled steaks, prime rib and full flavored cheeses. Best served at 65° F.
Minimally processed, gently pressed, and cool fermented in stainless steel to preserve the delicate fruit of this noble varietal. Chardonnay grapes are known for producing wines of finesse and clarity. Our very particular Chardonnay offers aromas and flavors of pear, lemon, lime and apple with a lingering hint of citron. It has a beautiful and brisk balance of fruit and mild, yet crisp acidity.
Serving suggestions: with shellfish such as lobster, crab, clams, mussels and oysters, it is equally delightful with lemon chicken and other light chicken dishes as well as light pasta and vegetarian fare. Best at approximately 48° F.
Produced in an off-dry style exhibiting fresh aromas and tastes of melon, peach, honey, jasmine and apricots with just a tease of grapefruit. This unusually delicious, limited production Riesling ages well and has just the right amount of sweetness, yet is complex, lush and balanced. It is cool fermented and aged in stainless steel and features a natural bright acidity that imposes the perfect exclamation point in just the right place!
Serving suggestions: a perfect partner for cheese and fruit platters, fresh fish or shellfish, as well as roast duck, Asian dishes, light pasta or just about any chicken recipe. It is equally wonderful as an aperitif. Terrific when served after a meal with or without chocolate. Best served at approximately 47° F.
